The story of change & pursuit of balance

HOW IT ALL BEGAN
There are times in life, when we feel that we need a change. No matter how established and comfortable our lives might be, there is a pull to leave it all behind and sail into the open waters for a new journey in life.
Thanks to our friends who moved to Prince Edward County, we began discovering this beautiful place and fell in love with it. After looking at our own interests and researching the County, the idea of creating a distillery from the ground up became our goal. Our Ukrainian heritage has also played a role in our path to the distillery. Home distilling in Ukraine is completely legal and making your own moonshine is similar to making wine in Italy. By combining our own experience with R&D support from our Ukrainian friends and relatives, we began to realize that we can make exceptional spirits. The original format of our venture was quite humble.
We then began to quickly realize that it is impossible to start small with a distillery. However, the idea had already planted a seed and the momentum carried us further.
Our business is a reflection of our own life philosophy and values. At some point we felt that it is somewhat unfair that in Canada, scotch is believed to be a superior whiskey and a French-made vodka is considered to be the best vodka. And thus the purpose of our venture were distilled to two points:
Elevate the profile of Canadian spirits. More precisely:
- Craft Canadian whisky matching the glory and quality of scotch
- Distill vodka matching the fame of the best premium vodka
Make drinking more meaningful
We aspired to create spirits which reflect who we are as Canadians and to make the moments when we share a drink with our closed ones especially meaningful. We wanted to tell the story of local craftsmanship and love of our beautiful country. Inspired by our mission, we decided to create a modern distillery with traditional values that is paired with the best craft distilling technologies in the market.
In the time of growing globalization, commercialization and consolidation, we feel often that we want something truly authentic, unique and possibly old-fashioned. Something we can trust and relate to. That is the reason why Prince Edward County is flooded with agri-tourists craving real craft food and drinks. We like the County because it feels authentic, human and balanced. You can buy an “old-fashioned” tomato and lettuce in a local farmers market that is exploding with flavour. Life is “old-fashioned” here, in a good way.
From here, our values were defined.

Honesty. Authenticity. Sustainability
Honesty and authenticity in everything is paramount.
The food we consume is sacred. Modifying i and adding harmful chemicals is not the way. We use only high quality ingredients, and no shortcuts in the production process.
