Our distinct character comes from an old-school raw corn and sugar sour mash process. We keep fresh, uncooked field corn continuously steeping in our fermenter, running multiple clean sugar fermentations over the same grain while pitching our premium yeast only once. This patient, multi-stage infusion allows the clean-fermenting sugar base to gently extract the natural, sweet corn oils and field aromas without creating a heavy, thick texture.
Following distillation the spirit undergoes a patient gravity charcoal filtration process and a dedicated period of rest. This meticulous polishing rounds out the edges, ensuring a velvety smooth mouthfeel that completely eliminates any alcoholic harshness. Free of artificial colorings or chemical modifiers, it is a vibrant spirit whether savored straight or built into your favorite cocktail recipes.
