Distillery in a desert? We hit the vein!

Now the real work begins. We need to make it happen: we need to build, get the equipment, crystalize the recipes and product design, obtain licensees (yes, we need quite a few, federal and provincial) and do many other things… but first we need water. Who could have thought that finding water on land surrounded by lakes would prove such a challenge! And after drilling four dry wells our hopes began to dwindle. With everything at stake and nothing to lose, we tried a centuries-old ‘witching’ method of dowsing – a form of divination used to locate water under earth. Hard to believe, but with seemingly little scientific backing, it worked and we found our water vein!  Our 100-feet deep artesian well supplies water filtered through limestone with a perfect mineral profile for making good spirits. It is possibly similar to the limestone water which made Kentucky bourbon so famous
